Healthy Hidden Veg Mac & Cheese

This is ultimate comfort food which the whole family can enjoy whilst also being nutritious.
Ingredients:
250 g uncooked pasta (macaroni, penne, spirals etc)
400 g cauliflower approx.
250 g courgette 2 medium
2 tablespoon 30g butter
2 tablespoon plain flour
1 medium onion finely diced
250 ml milk 1 cup
250 g grated cheese 2 cups
(You can add bacon lardons or cut strips of bacon when you cook the onions)
Method:
1. Cook the pasta as per the packet directions, drain and set aside
2. Roughly chop the cauliflower, peel the courgette, roughly chop and steam with the cauliflower until tender
3. While the cauliflower is cooking start on the roux sauce (white sauce)
4. Heat butter in a saucepan
5. Add onion and sauté until onion softened and translucent. I haven’t, but you can add bacon at this point if you wish.
6. Add the flour and cook for around 2mins whilst stirring
7. Gradually add the milk (I find if you preheat the milk first, which you can do in the microwave, you will get a smoother sauce and the sauce will thicken much more quickly)
8. Bring the sauce just to the boil then reduce the heat. At this point you should have quite a thick but smooth sauce
9. Stir in 65g/approx. half a cup of the grated cheese, it should melt through the sauce, remove from heat

Once the cauliflower and courgette is tender, drain, then puree. I usually use a stick blender.
11. Stir the vegetable puree into your cheese sauce
12. Combine your sauce with the pasta
13. Then pour the pasta and sauce mixture into an oven proof dish. You can top with the remaining grated cheese
14. Bake for around 25mins at 180 degrees Celsius, until the cheese on top is melted, bubbling and golden
15. Serve as a main or add as a side to meat, chicken or fish.
Martha isn’t a massive fan of the melted cheese on top, so you can also just serve without melting the cheese once the sauce is stirred through the pasta.
Allergies – wheat, dairy.
Store in an air tight container in fridge for 2-3 days. Can be frozen for up to 3 months.
