Mediterranean Baked Gnocchi

This is a perfect dish for when you’re short on time. Super quick and great for the whole family. I love a one pot meal. 
Makes enough for a family of 4
Ingredients 
> 1 block of Feta 
> 1 pack of Gnocchi 
> 400g Baby Plum Tomato’s 
> 1 Red Onion 
> Mixed herbs for seasoning 
Method 
> Slice the red onion not to thinly 
> Pour the tomatoes into to a ovenproof dish, and add the onions, along with the Gnocchi 
> Drizzle with olive oil, and season with mixed herbs, then mix 
> Place the Feta on top, drizzle with olive oil, and add sprinkle some herbs on
> Bake for 30 minutes, until the feta turn abit golden and the tomato’s soft
> Remove from the oven, mix everything together and serve. 
Can be stored in the fridge for 2/3 days
