Nutrient Rich Broccoli Egg Bites

This recipe is so quick to make and is a fab finger food for a quick lunch or an on-the-go snack.
Nutrient rich - Broccoli is a powerhouse of vitamins, minerals and fibre, plus eggs provide protein, while cheese adds a tasty calcium boost.
Suitable for 6months +
Ingredients:
4 eggs
70g grated broccoli florets (1 cup)
60g grated cheese (1/2 cup)
Method:
1. Preheat the oven to 180 degrees Celsius and grease a muffin tray with butter or oil.
2. Grate or chop the raw broccoli. If chopping, make sure it’s chopped into bite-sized pieces so it combines well into the muffins.
3. Mix all the ingredients together using a whisk to ensure its all mixed in well.
4. Scoop into a mini muffin or mini loaf tin, filling almost to the top.
5. Place in the preheated oven for 15mins or until the tops are golden brown and a toothpick inserted comes out clean.
6. Once baked, allow to cool for a few mins before serving.
Allergies – egg, dairy.
Store in an air tight container in fridge for 2-3 days. Can be frozen for up to 3 months.
