Another @rebeccawilsonfood recipe, this is a really easy child friendly jam as is uses the natural sweetness of canned peaches. Chia seeds are used to thicken the jam, but they are also packed with omega-3 fatty acids and rich in fibre and protein!
A really versatile recipe, you can use it to top toast, layer in sandwiches or mix into yogurts and porridges.
We’ve used peaches in our recipe, but you could use any canned fruit. Comment below if you try any other flavours!
Suitable for 6 mths + (using maple syrup instead of honey)
Makes around 1x 450g jar
Ingredients:
> 1x can of peaches in fruit juice (not syrup)
> 4 tbsp chia seeds
> tsp vanilla extract
> tbsp honey (over 1’s) or maple syrup - optional
Method:
1. Add the can of peaches, including the fruit juice it comes in, to a blender or hand blend.
2. Add the blended peaches and juice to a saucepan and add the rest of the ingredients.
3. Simmer on a low heat for 5-10mins until thickened and coats the back of a spoon.
4. Take off the heat and transfer to a heatproof dish or jam jar. The jam will continue to thicken as it cools.
Store in the fridge for up to 2 weeks. Can be frozen for up to 3 months.
