Sausage & Veg Orzo

If you’re anything like us, we love a sausage in our house, especially the kids. This is a great slow cooker or one pot dish. It’s really easy and also has some hidden veg in the sauce.
Ingredients:
> 400g good quality sausages
> 250g dried orzo
> 1 red onion peeled & finely chopped
> 1 red pepper deseeded & cut into 1cm squares
> 1/2 carrot grated
> 1/2 courgette grated
> 400g chopped tomatoes
> 1 tsp mixed herbs
> 1 tsp fennel seeds (crushed)
> 75g cream cheese
> 650ml hot veg stock
> Parmesan to sprinkle (Optional)
Method:
1. Chop up the sausages into a heated pan with oil and brown
2. Add the onions and peppers and cook until slightly softened
3. Add the garlic, mixed herbs, crushed fennel
4. tomatoes, tomato puree
5. Put it all into a slow cooker
6. Add the hot veg stock and the grated carrots and courgette
7. Leave to slow cook for 2-3hours on high
8. Add the orzo and cook for 30mins until cooked
9. Stir through a dollop of cream cheese
10. Finish with a sprinkle of parmesan (optional)
If you don’t have slow cooker and want to cook on the hob, just use a pan with a lid and add the orzo when you add the veg stock.
If the mixture becomes too dry before the orzo is cooked, add a splash of water (a little at a time).
