This is a regular meal in our house as we all love it. It’s really easy to prep (15mins), then you can either leave to simmer or pop in a slow cooker. It’s packed with flavour and the cooked down veg makes for a deliciously rich sauce.
It’s also a great one to get your toddler involved helping to grate (supervised) the veg… No I don’t have a really small right hand 😆
Suitable for 6months + (You can blend for first tastes)
Makes 2 adults and 2 little portions
Ingredients:
500g of lean beef (or pork) mince
1 x small carrot grated
1 x small courgette grated
4-5 mushrooms chopped up small or grated
2 x tsp paprika
1 x tsp mixed dried herbs
1 garlic clove, crushed
1 beef stock cube (or veg if you do t have any in) Low salt if possible
1 tbsp Worcestershire sauce
500g passata
150ml water
Add pasta of choice to serve
Method:
1. Grate all the veg
2. Over a medium heat, add the mince to a frying pan or saucepan and cook until brown.
3. Add the paprika, garlic, mixed herbs and crumbled stock cube. Give it a good stir. Add the Worcestershire sauce.
4. Stir through the passata, then using the passata box fill it up with the water (about 1/3) and swirl it around. Add this to the pan.
5. Stir through all of the grated veg.
6. Let it simmer for 30mins or add to your slow cooker (which I always do) and let it cook for 2hrs. If it looks like it’s thickening up a bit too much, just add a splash of water and stir through.
7. Serve with your pasta of choice. For little ones you can server larger size pasta, like fusilli or rigatoni. We like Orecchiette, but only because it sounds a bit fancier. 😆
8. This is a dairy free and egg free meal, but you can add cheese if you like.

Store in an air tight container in fridge for 2-3 days. Can be frozen for up to 3 months
